The Ultimate Nachos
For the Tortilla Chips:
8 corn tortillas
Vegetable oil for frying
Salt
For the Salsa:
2 large tomatoes, diced
1/2 onion, diced
1 jalapeño pepper / green chilli, minced (remove seeds for less heat)
1/4 cup cilantro, chopped
1 tablespoon lime juice
Salt and pepper to taste
For the Spicy Cheddar Sauce:

Make the Tortilla Chips: • Cut the corn tortillas into triangles. • Heat oil in a deep skillet to 350°F (175°C). • Fry the tortilla triangles until golden brown and crispy. • Remove from the oil and drain on paper towels. • Sprinkle with salt.
Make the Salsa: • Combine all salsa ingredients in a bowl. • Stir to combine and season with salt and pepper to taste.
Warm the Spicy Cheddar Sauce: • In a ramekin, pour the spicy cheddar sauce and microwave for 25 seconds.
Serve: • Arrange the tortilla chips on a serving platter. • Top with the salsa and warm spicy cheddar sauce. • Serve immediately.
